Sometimes a recipe is born out of the necessity to make do with what you've got on hand. The night I made this dish, I was late starting dinner (this happens a lot) and I didn't exactly have a plethora of options at my disposal. Because it was late I didn't have time to bake the sweet potato so I had to figure out a way to cook it quickly. I also had Haddock Fillets that had been in my freezer a bit longer than they should have been so they were less than optimal...that being said, I hate throwing food away and they started out as optimal so in my mind they were definitely worth using...just would take some creativity and they needed to not be the main event. The picture above is what happened - here is how I got there:
Serve the fish and vegetable curry with ample sauce in a bowl over the noodles.
This recipe works for Paleo, Grain Free, Dairy Free, Low Carb/high fat and Ketogenic Diets - although for Ketogenic Diets you'd probably have this on a carb re-feed day or replace the sweet potato with Butternut Squash for a lower carb option.
