I have been mulling over this recipe for quite a while....a few weeks actually. Let me begin by saying that aside from all the health benefits that various versions of the Bulletproof Diet can bring to almost anyone, the thing I treasure the most from this way of eating is Bulletproof Ice Cream. It is rich and decadent, creamy, delicious and, above all else nourishing. I have even made versions that my son has eaten as part of a breakfast - think about it: eggs, grass fed butter, coconut oil, Brain Octane oil, vanilla, Monk Fruit/Erythritol/Xylitol, maybe unsweetened cacao powder, sometimes collagen powder.....toppped with a mix of nuts, seeds, hemp etc....there are certainly worse ways to start the day than this healthy fat and protein bomb!
On Thanksgiving I made a Pumpkin Pie Version that I brought to a dinner party - delicious. But now it is December and time for something of another season - to me, the combination of peppermint and chocolate is one of my favourites. The beauty of this ice cream, especially for us low carb people is that it complies with Low Carb/High Fat, Paleo, Bulletproof and Ketogenic plans - there's no sugar to spike insulin, the chocolate comes from raw unsweetened cacao nibs and the sweetener can be your choice of Monk Fruit, Erythritol or Xylitol or some mix of the three. If you decide to use Xylitol just be mindful around dogs - this stuff is literally deadly to them so no sharing or spoon licking!! You don't have to be low carb or keto to eat this but if you are on a high carb plan you most likely need to manage your fat a bit more carefully so just be mindful.

You do not need an ice cream maker to make this ice cream although I have been told that using one may improve the texture somewhat and make the ice cream easier to eat - if you have one and decide to use it and find it makes a difference definitely let me know!
