Grain Free Chocolate Nuts & Seeds Cookies

This recipe is a riff off one of the first "Paleo Cookie" recipes I fell in love with from the book Everyday Paleo which remains one of my go to favourites.  Nutrient dense, grain free, low carb high fat and not too sweet these cookies hit the spot for kids and adults alike when you need a sweet treat.  They are really easy to make and go VERY well with Bulletproof Ice Cream...as a sandwich...that post will come soon, but in the meantime check out these cookies...enjoy!! 

​2 Cups Almond Meal (another variation is to use hazelnut flour or a mix of the two)
½ cup flax seed meal     
½ cup unsweetened shredded coconut
½ cup raw sunflower seeds
½ cup raw pumpkin seeds
1/4 cup raw unsweetened cacao powder
6 scoops (60 gr) Vital Proteins Collagen Peptides
1 tablespoon cinnamon
1 tsp salt
1 tsp baking soda
2 eggs
½ cup maple syrup
1/2 tsp vanilla extract
​1/2 tsp almond extract
½ cup + 2 TBSP coconut oil

Directions:
Preheat oven to 325


  1. Mix dry ingredients in a large mixing bowl
  2. In a smaller bowl combine eggs Maple syrup, vanilla extract and melted coconut oil with a hand mixer or with an energetic whisk – excellent way to work out any negative energy ☺)
  3. Stir wet ingredients into dry ingredients
  4. On a parchment lined baking sheet drop tablespoon sized amounts of batter (flatten them if you like crispier cookies)
  5. Bake the cookies for 20-25 minutes watching them near the end so they don’t burn
Last time I made them I turned the oven off after 20 minutes and forgot about the cookies – 2 hours later I remembered…they were awesome crispy not burnt but I had made those rounder (not as flat) so that may be why it worked…in other words you will have to play with the cooking time to get them how you like them…
Nutritional Info (Based on 31 cookies from this recipe) per cookie: 150cal, 13g of fat, 5 Net Carbs, 5g protein
