This recipe is a riff off one of the first "Paleo Cookie" recipes I fell in love with from the book Everyday Paleo which remains one of my go to favourites. Nutrient dense, grain free, low carb high fat and not too sweet these cookies hit the spot for kids and adults alike when you need a sweet treat. They are really easy to make and go VERY well with Bulletproof Ice Cream...as a sandwich...that post will come soon, but in the meantime check out these cookies...enjoy!!
2 Cups Almond Meal (another variation is to use hazelnut flour or a mix of the two) ½ cup flax seed meal ½ cup unsweetened shredded coconut ½ cup raw sunflower seeds ½ cup raw pumpkin seeds 1/4 cup raw unsweetened cacao powder 6 scoops (60 gr) Vital Proteins Collagen Peptides 1 tablespoon cinnamon 1 tsp salt 1 tsp baking soda 2 eggs ½ cup maple syrup 1/2 tsp vanilla extract 1/2 tsp almond extract ½ cup + 2 TBSP coconut oil Directions: Preheat oven to 325
