Given that I don't bake much anymore, my muffin tins don't get much use these days. A couple of weeks ago on a Sunday, I sat looking at my carton of eggs and package of bacon wondering how I could make brunch quickly without too much mess. I can't really tell you how this came to me but the next thing I knew I was rolling a slice of bacon into each muffin opening and careful breaking an egg into the centre.
Popped it all into the oven at 300 till the eggs were done to our liking.
In the meantime, I warmed up King Mushroom spears from dinner last night, created a bed of greens in each bowl and pulled out the guacamole and salsa from the fridge.
If you don't enjoy raw greens you can steam them or sauté them in a bit of ghee - they are invaluable at sopping up the egg!
The eggs and bacon easily spooned out of the tins thanks to the bacon fat and everyone was very impressed indeed!
The bonus - very little clean up and 3 people got to eat breakfast at the same time!
It goes without saying that the bacon was from pastured pigs and the eggs from pastured chickens....healthy fats, greens, protein...what more can you ask for!!
