Being part of that low carb crowd who does better with little to no grain in my diet and yet, occasionally craving something like rice pudding I got to work last night almost without realizing it. The driver for this project was a bag of Green Banana Flour that has been sitting in my pantry for a while calling out my name. Trouble was I wasn't sure what to do with it - but I know that the resistant starch in that flour is great food for my micro biome - a community that I strive to keep happy at all costs. After all, a healthy micro biome keeps our brains happy, supports good digestion, keeps us healthy and even helps to maintain optimal body composition. I've been thinking about all this for a while and last night, it clicked, I decided to give it a try in Chia Pudding. I also wanted to add an extra bit of Keto Power to this batch so I pulled out a sachet of KetoKreme (powdered MCT, powdered coconut, cinnamon and Stevia) and my bottle of Brain Octane....this was going to be awesome....and it is!
The Green Banana Flour, in addition to it's "functional" aspect also adds a mild sweetness without any real discernible banana taste. For those of you who are banana lovers and not too hung up on carbs I would think that even 1/2 a banana mashed up and mixed in to the total mixture would be fantastic as well but it would definitely turn this into a "Banana" Chia Pudding - what I was after was the vanilla flavour of rice pudding. Here's what I did:
