I just returned from a two week trip through Israel and while the food was overwhelmingly spectacular one of the most commonly served dips (hummus) is something that just does not agree with me. I love it while I'm eating it but it leaves me bloated and miserable within a couple of hours. My close friend Monika knows this so she served us an amazing green dip instead of hummus one night before dinner. I came home and made it my own - it is now a favourite and a nice change from the usual guacamole. It's also lighter and a great way to get more greens into your daily diet. The addition of sprouts amps up antioxidants and the lemon peel adds additional vitamins and minerals (vitamin C, calcium, potassium), fibre and bioflavonoids to your dip - all contributing to the nutrient density of this fresh and creamy dip.
Place all ingredients in a blender and blend till (mostly) smooth.
Taste to adjust seasonings keeping in mind that flavours will blend and improve after a few hours.
Serve with raw or lightly steamed vegetables, endive leaves (to scoop).
Store in a tightly covered container in the fridge (assuming you have leftovers)
