This recipe is the result of a collaboration between me and a Nutritionist friend of mine, Stefanie Teitleman - she goes by the Instagram Handle @Namastefyoga (the name says it all :-).)..she was helping me out with a project and had this idea of using avocado with coconut flour in a pancake. This looked to me a bit like a great option to the banana pancakes I used to make when I was a bit freer with my carb intake so they definitely got my attention....next thing you know we are in the kitchen pulling ingredients out of the fridge and pantry, riffing on her concept.
