Pancakes are one of the many things that people miss from their old diets as they shift to healthier way of living - this recipe could be the thing that finally helps them to just move on! It is incredibly nutrient dense and truthfully this recipe as published packs a wallop - if you are mindful of your "energy intake" you may want to cut back from 2 eggs to 1 egg or perhaps share your stack with someone.
This recipe is the result of a collaboration between me and a Nutritionist friend of mine, Stefanie Teitleman - she goes by the Instagram Handle @Namastefyoga (the name says it all :-).)..she was helping me out with a project and had this idea of using avocado with coconut flour in a pancake. This looked to me a bit like a great option to the banana pancakes I used to make when I was a bit freer with my carb intake so they definitely got my attention....next thing you know we are in the kitchen pulling ingredients out of the fridge and pantry, riffing on her concept.
